In the Vineyard

It all begins between late September and early October, when the Corvina, Corvinone, and Rondinella grapes are harvested and pressed for the base Valpolicella. This young, fresh, and lively wine is our raw material. Our art begins here: we select these wines from the finest in Valpolicella. We don't settle for grapes sourced solely from our own vineyards; we seek the perfect character that will become the cornerstone of our blend.

The Withering

The heart of Valpolicella Ripasso beats thanks to an ancient process: Appassimento. Although our Valpolicella Superiore Ripasso is not an Amarone, its profound complexity comes precisely from its contact with the Amarone pomace.

Appassimento, the slow and natural dehydration of the grapes, concentrates sugars, polyphenols, and aromas in a way no other process can. This pomace, still rich in these precious compounds, is used for the second fermentation of Ripasso.

In Steel

Between January and February, the magic happens: the base Valpolicella undergoes its transformation through the Ripasso method, a second fermentation on the pomace, still rich in sugars and aromas from the Amarone. This crucial step enhances the structure and aromatic intensity. After the Ripasso, the wine rests in stainless steel tanks. It is at this stage that the winemaker puts the art of blending into practice: we assemble the various batches of selected Ripasso to achieve the balance and unique aromatic complexity of Recenzo, the fruit of our winemaking experience.

In Wood

Once blended, the wine ages for at least 12 months in large barrels. The natural porosity of the wood allows for delicate micro-oxygenation, softening the tannins and stabilizing the color. Anthocyanins and tannins combine, enriching the texture. The final result is a harmonious and balanced Valpolicella Superiore Ripasso, which not only reflects all its elegance but also embodies the strength that only our meticulous blending and the winemaker's experience can instill.
